Quinoa Upma

Ingredients:

1 cup quinoa, rinsed
2 tablespoons oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 teaspoon urad dal
1 teaspoon chana dal
1 onion, finely chopped
1-2 green chilies, finely chopped
1/2 teaspoon ginger, grated
1/4 teaspoon turmeric powder
1 carrot, finely chopped
1/2 cup green peas
Salt to taste
2 cups water
1 tablespoon lemon juice
2 tablespoons chopped coriander leaves


Instructions:

1. Rinse quinoa thoroughly and soak in water for 10-15 minutes. Drain and keep aside.
2. Heat oil in a pan, add mustard seeds, cumin seeds, urad dal and chana dal. Saute until mustard seeds start to splutter.
3. Add finely chopped onion, green chilies and grated ginger. Saute until onion turns translucent.
4. Add chopped carrot, green peas and saute for a minute.
5. Add drained quinoa, turmeric powder, salt and water. Mix well and bring it to boil.
6. Reduce the heat and cover the pan with a lid. Cook on low flame for 10-12 minutes or until the water is absorbed and quinoa is cooked.
7. Once cooked, add lemon juice and coriander leaves. Mix well.
8. Serve hot with coconut chutney or any other side dish of your choice.
