Quinoa Soup
Quinoa soup is a nutritious and delicious dish that can be made with a variety of vegetables and spices. Here is a simple recipe for quinoa soup:
Ingredients:
1 cup quinoa, rinsed
1 onion, chopped
2 garlic cloves, minced
2 carrots, chopped
2 celery stalks, chopped
1 red bell pepper, chopped
1 tablespoon olive oil
4 cups vegetable broth
1 teaspoon ground cumin
1 teaspoon dried oregano
Salt and pepper, to taste
Juice of 1 lime
Fresh cilantro, chopped, for garnish
Instructions:
In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until fragrant and translucent, about 5 minutes.
Add the carrots, celery, and bell pepper to the pot and continue to sauté for another 5-7 minutes, until the vegetables are slightly tender.
Add the quinoa to the pot and stir to combine with the vegetables.
Pour in the vegetable broth and add the cumin and oregano. Stir to combine.
Bring the soup to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the quinoa is cooked through and the vegetables are tender.
Season the soup with salt and pepper to taste. Squeeze the lime juice into the soup and stir to combine.
Serve the soup hot, garnished with fresh cilantro. Enjoy!
