Quinoa Salad

 Quinoa salad is a healthy and flavorful dish that can be customized with your favorite vegetables, fruits, and dressing. Here is a simple recipe for quinoa salad:


Receipe No 1 :


Ingredients


1 cup quinoa, rinsed
2 cups water
1/4 cup olive oil
2 tablespoons red wine vinegar
1 tablespoon honey
1/2 teaspoon salt
1/4 teaspoon black pepper
1 red bell pepper, diced
1 small red onion, diced
1/4 cup chopped fresh parsley
1/4 cup chopped fresh mint
1/2 cup crumbled feta cheese


Instructions:


1. In a medium saucepan, combine the quinoa and water. Bring to a boil over high heat. Reduce the heat to low and simmer, covered, for 15-20 minutes or until the quinoa is tender and the water is absorbed.
2. In a large bowl, whisk together the olive oil, red wine vinegar, honey, salt, and pepper.
3. Add the cooked quinoa, red bell pepper, red onion, parsley, and mint to the bowl. Toss to combine.
4. Sprinkle the feta cheese over the top of the salad.
5. Serve immediately, or refrigerate until ready to serve.

Ingredients


1 cup quinoa, rinsed
2 cups water
1 red bell pepper, diced
1 yellow bell pepper, diced
1 cucumber, diced
1/2 red onion, diced
1 avocado, diced
1/2 cup fresh parsley, chopped
1/4 cup olive oil
2 tablespoons lemon juice
1 garlic clove, minced
Salt and pepper, to taste


Instructions


1. In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce the heat to low and simmer for 15-20 minutes, or until the quinoa is tender and the water is absorbed.
2. In a large bowl, combine the cooked quinoa, red and yellow bell peppers, cucumber, red onion, avocado, and parsley.
3. In a small bowl, whisk together the olive oil, lemon juice, garlic, salt, and pepper.
4. Pour the dressing over the quinoa salad and toss to combine.
5. Serve the salad chilled or at room temperature. Enjoy!


Note: You can also add other vegetables or fruits to the salad, such as cherry tomatoes, diced mango, or sliced strawberries. You can also add some protein, such as grilled chicken or chickpeas, to make the salad more filling.
