Quinoa Pulao

 Quinoa pulao is a nutritious and flavorful dish that is a healthy alternative to traditional rice pulao. Here is a simple recipe for quinoa pulao:


Ingredients:


1 cup quinoa, rinsed
1 onion, finely chopped
1 carrot, peeled and diced
1 cup green peas
2 cloves garlic, minced
1/2 inch ginger, minced
1 cinnamon stick
2 cardamom pods
2 cloves
1 bay leaf
1 teaspoon cumin seeds
2 tablespoons oil or ghee
Salt, to taste
2 cups water
Fresh coriander leaves, chopped, for garnish


Instructions:


1. Heat oil or ghee in a pan and add the cinnamon stick, cardamom pods, cloves, bay leaf, and cumin seeds. Saute for a few seconds until fragrant.
2. Add the onion, garlic, and ginger and sauté until the onion is translucent.
3. Add the diced carrots and green peas and sauté for a few minutes until slightly tender.
4. Add the rinsed quinoa to the pan and stir to coat with the spices and vegetables.
5. Add salt to taste and 2 cups of water. Stir to combine.
6. Bring the mixture to a boil, then reduce heat to low, cover the pan with a lid and simmer for about 20 minutes or until the quinoa is cooked through and the water is absorbed.
7. Remove from heat and let it rest for 5 minutes before opening the lid.
Garnish with fresh coriander leaves and serve hot. Enjoy!


Note: You can also add other vegetables to the pulao, such as diced potatoes or green beans. You can also add some protein, such as tofu or paneer, to make the pulao more filling.
