Quinoa Dosa

 Ingredients:


1 cup quinoa, rinsed and soaked for 4 hours
1/2 cup urad dal, rinsed and soaked for 4 hours
1/2 teaspoon fenugreek seeds, rinsed and soaked for 4 hours
1/2 teaspoon salt
Water, as needed


Instructions:


1. Drain the quinoa, urad dal, and fenugreek seeds, and rinse them well.
2. In a blender or food processor, grind the quinoa, urad dal, and fenugreek seeds with enough water to make a smooth batter. The batter should be of pouring consistency, like pancake batter.
3. Transfer the batter to a large bowl, and add salt. Mix well.
4. Cover the bowl with a lid or a plate, and let it ferment in a warm place for 8-12 hours, or overnight. The batter should rise and become slightly sour.
5. Heat a non-stick pan or a cast-iron skillet over medium-high heat. When the pan is hot, pour a ladleful of batter onto the pan, and spread it in a circular motion to make a thin dosa.
6. Drizzle some oil or ghee on the edges of the dosa, and let it cook for 2-3 minutes, or until the bottom is golden brown and crispy.
7. Flip the dosa and cook the other side for 1-2 minutes, or until it is lightly browned.
8. Remove the dosa from the pan, and repeat the process with the remaining batter.
9.Serve the quinoa dosa hot with coconut chutney, sambar, or any other side dish of your choice.
